Jim Beam has developed a process to extract the whisky left trapped in the wood of a barrel (dubbed the devil’s cut) after the bourbon has drained out of it. This barrel extract is then blended with six year old Jim Beam bourbon. The result of this ingenious innovation is a robust whisky with an intense punch of oaky spice, penetrating flavours and a 45 per cent alcohol kick. Not my kind of bourbon. Tastes a little charred, maybe burnt caramel. really one-dimensional. Better to get Beam Black or, if you want real fire and brimstone, Talisker.
