This is a new recipe for the 25 year old, one that employs a higher ration of sherry-influenced whisky; I scored the original recipe 5 Stars. Deep tawny, copper hue; superb purity. The initial sniffings are distinctively briny, salty and cotton candy sweet; aeration serves to broaden the aromatic scope as scents of pastry, baked pear and butterscotch are added to the profile. The palate entry is rich, almost jammy and peppered with salty/winey flavors that say Bowmore, but with greater emphasis on the sweetness; the midpalate finish is long, nicely balanced between the sea salt and the sherry, and succulent. The change in taste-profile is due entirely to what type of whisky was available for bottling and sherry cask whisky was there and ready; the superior craftsmanship of Bowmore remains steady and true.
