Medium straw colour with fine mousse & medium+ intensity on the nose.
Positives: Medium toast, lemon, baked apples, yeast, biscotti & chalk. Medium+ body with good acidity & long length.
Negatives: Only a few bottles left in LCBO stores.
Interesting Point: One of the finer Canadian sparkling wines that can go head to head with champagne, but at almost half the cost.
Drink now or over the next 5 years on its own or pair it with raw oysters.

Tried a glass of the (recently released) 2008 vintage with lunch on the winery patio.
I bought a six-pack (and considered buying a dozen).
I won't be surprised if this batch sells out quickly!
A fine example of why Ontario can produce world class sparklers. Fresh and bright, with aromas and flavours of lemon cake, brioche and yellow apple. Delicate bubbles and excellent balance make for an elegant pretty wine that can be paired with everything from fresh seafood to fruity desserts, or simply enjoyed solo.
