Straw in colour with a medium to medium+ intense nose and fine mousse.
A lighter vintage style Champagne that’s easy to drink and it’s good

Positives: This creamy sparkling wine features light toast, brioche, Anjou pear, baked apple, pink grapefruit and lemon filling. Medium body with good acidity & a long length.

Negatives: None

Interesting Point: Aged en triage for a minimum 3 years, then hand riddled and disgorged.

Drink now or in the next 7 years on its own or and pair it with oyster Rockefeller.

The 08 Stellers Jay is starting to develop nicely in the bottle. Steady, long lasting beads of fine bubbles, pale straw in the glass. Little bit of SO2 on the nose when first opened, gives way to red apple, yeast and lemon. Fairly Brut and crisp but with a touch of extract on the soft finish. Apple, pear, and lemon flavours on the palate with crunchy acid and medium body. Pass the hors d'oeuvres. Will start to develop more doughy characteristics as it ages, so keep some around till 2018.

A perpetually solid bubbly, the Steller's Jay offers red apple skin, toasted nut and doughy notes on the nose — pretty classic stuff. This Chardonnay/Pinot Blanc/Pinot Noir blend is lively and intense, with red and green apple flavours and a crisp, lemony undertone that's plenty fresh.
