This sparkling Merlot is quite frothy with the bubble structure being a little aggressive in the mouth. That aside the aromas and flavors are quite enjoyable with roasted coffee, black olive brine, peppercorn and blueberry macaron. I like the acid structure here and the sugar level has been kept fairly low allowing the wine to feel dry with a firm crispness to it. A very enjoyable wine, straight from the ice bucket on the lawn while you decide between pork ribs and spicy smoked chipotle prawns.
