Founded in 1986, Cave Spring celebrates its 21st and 22nd vintages of innovation this year - their 2006 and 2007 vintages will be on shelves in 2008. This late-harvested Riesling is a rich wine with aromas of mango, pear, caramel apples and cinnamon. Serve this medium-in-sweetness, balanced wine with pâté, lemon tarts or apple cake. (375 ml)

Intense aromas of dried pineapple, mandarine orange, and mango with a good streak of minerality. The rich fruit flavours lead to a long length. There's a good balance of sweetness and acidity making this a very refreshing medium-sweet wine.

I like late harvest wines more than I like ice wine for several reasons. It is not as sweet and they offer more acidity for balance.
Cave Spring's Indian Summer Select Late Harvest is a real treat. Sweet, lively acidity that support the wonderful apple and peach fruit notes.
