The 2012 Finca Dofí is mostly Garnacha with a mere 4% Cariñena. The destemmed and lightly crushed grapes fermented in oak vats with natural yeast. It went through malolactic fermentation in oak barrel (without the addition of any yeasts or bacteria) where the wine matured for some 16 months. As the other 2012s, there is a Mediterranean character inherent to the vintage. Aromatic herbs and spices are very evident here, the fruit is ripe, but leans more toward the red than black cherries.
